Back to school days tomorrow, and no time for special breakfasts. I hadn’t broken out the waffle maker this break, and I kept thinking about it, so today was the last chance for a while. We have this lovely thick bacon to serve alongside.
But I didn’t want to just make a regular waffle. During a conversation with my sister-in-law and her friend, I’d been given a really good idea I wanted to try out, especially because it involved one of the First Reader’s favorite foods.
- a Spice Cake Mix
- 1/2 c walnut meal
- 1/2 c oil
- 1 c milk
- 3 eggs
I beat all the ingredients together in a bowl, then scooped about a half-cup into the waffle maker. I’ll note that I have this waffle maker, so it makes a thick Belgian-Style waffle. The batter is quite frisky, so you may have to adjust the amount to prevent oozing around the edges. I might try it with a dab more liquid next time to thin out the batter – I was more-or-less following the directions on the box.
These took longer to cook than a regular waffle, and they don’t really get crispy. But they are very tasty, and don’t need syrup. I had mine with whipped cream, which was perfect. The First Reader just put butter on his.

Hmm. I’m tempted to try it with a carrot cake mix, now.
I seriously thought about finely grating a carrot and adding it, but then realized I’m out. I suspect carrot cake mix would work better, the waffle doesn’t cook as long as cake and fresh carrot might not be done.
